Rocky Road – oh what a joy!

I have a close and very loyal relationship with Rocky Road aka RR; it’s been a long term friend to me and always a star within a picnic or partner to a cup of coffee.

I’ve filled so many trays with delicous melted chocolaty/biscuity/goey  mixtures and added in lots of ‘highlight’ ingredients.  Today’s friend is staring freeze dried raspberries to compliment the baby pink marshmallows.  I made it for this weekend’s school cricket matches and so my RR was kept relatively simple for more junior tastes.

However, my friend RR can easily make a sophisticated flavour step up  – my particular weakness is ginger & glacé cherries or lime & pistachio or orange & almond ….. I could go on and on.

Rocky Road can easily star in dinner parties, coffee mornings, birthday teas as well as picnics.  It’s best kept in the fridge but once served will gently soften for as long as the pieces last/before they are eaten, which isn’t usually too many minutes!

I’ve used many recipes over the years and mostly return to Nigella’s Express Recipe (page 258) which is always a good base from which to add to.
