Got any spare bananas……?

This recipes is a true family favourite – and makes 2 generous loaves…. one for now and one for the freezer!  You can use fresh/ripe bananas or better still – when you find soft/going brown bananas in your fruit bowl – pop them in the freezer (whole/skins on) and then defrost for this recipe – which adds real depth to the ‘banana’ flavour.

If you can serve this lovely loaf-cake in the sunshine and decorate with spring flowers you will have the perfect tea time treat!

Banana Cake – makes 2 loaves

 4 medium bananas – fresh or partly defrosted
250g self raising flour
2 level tsp of baking powder
100g butter or flora
220g caster sugar
2 eggs
2 handfuls of sultanas (optional)

Preheat oven to 180oC/160oC Fan

Using a magi-mix, mash banana first and then add all ingredients, except sultanas (if using)

Once completely mixed, add sultanas and quickly blitz, to distribute fruit but not to cut it up too much.

Line and fill two loaf tins (approx 450g) and then place in oven for 45 mins.

Test with skewer/comes out clean before removing and cooling whilst still in tin

Once cooled, remove and serve – or can be frozen for up to 3 months.
